- I JUST WANTED TO SAY THAT I TRIED YOUR CHOCOLATE FOR THE FIRST TIME THIS WEEK AND WAS SURPRISED AT HOW MUCH I ENJOYED IT. I'VE TRIED OTHER SMALL SCALE NORTH AMERICAN BEAN TO BAR CHOCOLATE WITH HOPES OF ENJOYING THEM BUT I WAS ALWAYS DISAPPOINTED BECAUSE THEY LACKED THE COMPLETE PACKAGE OF WHAT MAKES GREAT CHOCOLATE. THEY WERE MOSTLY THE SAME TO ME, WELL MARKETED, LACKING ANY DEPTH OF FLAVOUR, AND SOMETIMES EVEN GRITTY. I APPRECIATE THOSE MAKING CHOCOLATE WITH A CONSCIOUS MIND, BUT THEY USUALLY LACK WHAT I APPRECIATE FROM THE MORE POPULAR FRENCH AND ITALIAN FINE CHOCOLATE. YOU GUYS SEEM TO DO A GREAT JOB OF BRINGING TOGETHER WHAT OTHER BEAN-TO-BAR MANUFACTURES ARE AIMING FOR (ORGANIC, SOCIAL-CONSCIOUS, HIGH QUALITY) WHILE BEING COMPARABLE IN REFINEMENT TO THE FRENCH AND ITALIAN BARS I ENJOY SO MUCH. I ADMIRE THE FACT THAT YOU DON'T EVEN ADD VANILLA, SOY LECITHIN, AND ADDITIONAL COCOA BUTTER. NOT THAT I UNDERSTAND MUCH ABOUT CHOCOLATE MANUFACTURING, BUT I CAN IMAGINE IT TAKES SOME GREAT SKILL TO BE ABLE TO MAKE FINE CHOCOLATE WITHOUT THESE ADDITIONS. -JOSEPH
