We have created this limited Valentines Day bar for all you lovers out there. Using our award winning 72% Madagascar chocolate, we then paired it with organic freeze dried raspberry and organic vanilla coconut palm sugar.
We are excited to celebrate the release of the @eelriverbrewing Single Origin Mocha Stout tonight from 6-8 at the Eel River tasting room in Fortuna, and tomorrow from 6-8 at Bittersweet in Arcata! This collaboration beer between us, @eelriverbrewing and @humboldtbaycoffee will only be available draught only, so keep your eyes peeled for this special beer in your favorite watering hole.
Single Origin Mocha Stout – a smooth, roasty, chocolate and coffee enhanced milk stout. Single Origin Madagascar Cacao from Dick Taylor and Single Origin Peruvian Roast from Humboldt Bay Coffee are used throughout the brewing process. The result is a rich, creamy milk stout - designed to be poured on nitro.
Next in the new line up is 75% Brazil, Fazenda Camboa. This new single origin bar is smooth as silk and has tasting notes of honeysuckle/ fresh grape/ and walnut.
Browned Butter from Humboldt Creamery paired with our 73% Northerner Blend, hand sprinkled with roasted cacao nibs and sea salt.

We were humbled to receive three awards at the Northwest Chocolate Festival! This is the first time we have won an award for an inclusion bar, and the first North American award for a Solomon Island chocolate :)
We are thrilled to learn that our 72% Belize, Toledo won bronze at the 2016 World Finals of the International Chocolate Awards today! A big congratulations to all of our fellow chocolate makers who won with their outstanding chocolate.

When Adam Dick returned from his trip to the Solomon Islands Chocolate Week, he brought back 25 kilos of exceptional cacao from the farm of Elsie Vota. We are so excited to finally be able to offer this Exclusive Release of 600 28g(1oz) chocolate bar for you to enjoy. We will be doing a roll out release, so we will have a couple hundred bars for the @nwchocolate Festival. These bars are only available at dicktaylorchocolate.com and in the DT chocolate boutique

We were overjoyed last week to find out that our Belize Drinking Chocolate won a Sofi Gold award! The Sofi's had 3200 entries in multiple fine food categories this year and only 28 took gold!

"Chocolate is unusual. It is one of the few food products that is largely produced and consumed in parts of the world that are often hundreds or thousands of miles away from where the raw ingredients are grown and processed. This has created a disconnect in the supply chain of one of the most widely loved foods. In November Dustin and I had an opportunity to bridge that divide just a bit. We traveled to Guatemala to visit Emily Stone and Cacao Verapaz to explore some potential Guatemalan cacao. Emily and her team have been working for the last several years to cultivate a relationship with a very small network of cacao growers. While the current amount of cacao grown in Guatemala is very small, there is tremendous potential for growth in both quality and volume. One thing we were struck with, as we visited farms, was this potential. We sampled cacao that was exceptional and this was from farms with only one or two harvest and fermentation cycles under their belts. We saw an opportunity to not only start working with a farm early on but also grow with them and have a chance to develop long term relationships. The bar we are offering now is the first bar ever made with cacao from Finca Chimelb. We feel it showcases the current quality that the farm is producing and at the same time gives us a sense of excitement and anticipation at the potential for the future as they improve their cultivation and post harvest techniques.

After last summers Fancy Food show in New York (where we took home two silver SOFI awards) we decided to set up a booth at the Winter Fancy Food Show in San Francisco. We had a fantastic time selling chocolate, doing interviews and participating in the countries greatest fine food show. See you next year!
